1 1/2 cups wheat bran or oat bran
1 cup whole wheat flour
2 tablespoons ground flaxseed
1 1/4 teaspoons baking soda
1 teaspoon ground cinnamon
1/8 teaspoon salt
3/4 cup fat-free milk
1/3 cup honey
1 ripe medium banana, mashed with a fork
1 large egg
2 tablespoons olive oil
1 teaspoon pure vanilla extract
1 cup fresh or frozen blueberries (or other berries)
Preheat over to 400°.
Mix together dry ingredients.
Mix together wet ingredients.
Combine together wet and dry ingredients - then fold in blueberries.
(Note: If using frozen berries, toss with a little flour first so that it doesn't turn your batter blue.)
Transfer batter into a greased muffin tin.
Bake at 400° for 18-20 min or until a toothpick can be inserted and taken out clean.
Makes about 12 muffins.
